Whole spices are best used in long cooking recipes and should be added as soon as cooking begins to yield greatest amount of flavour.

Keep spices and herbs away from direct sunlight or bright indoor lights, heat and moisture. These elements will speed up the loss of flavour and aroma. Therefore, avoid storing your spices and herbs over the stove, dishwasher, sink or near a window.
